2 1/2 ounces gin

1/2 ounce fresh lime juice

1/2 ounce simple syrup

1 cut fresh lime wheel

(Lime juice and simple syrup can also be substituted with Rose' Lime Juice)

3. The Big Short, Sazerac

1 1/2 ounces rye whiskey

1/8 ounce absinthe

2 dashes of Peychaud's bitters

2 dashes of Angostura bitters

1 sugar cube (white)

1 lemon peel

In a mixing glass, place the sugar cube at the bottom. Add bitters and splash of whiskey; muddle until mixed. Add the remaining whiskey and ice, then stir. In a separate, chilled old-fashioned glass, add absinthe and turn glass to coat the inside. Pour out any excess absinthe. Strain stirred cocktail into the old-fashioned glass and garnish with lemon peel. This cocktail is served neat (no ice).

4. Room, French Martini
