5 Stupid Simple Over-the-Top Grilled Cheeses

1. The Crazy Sriracha and Potato Chips Grilled Cheese

How long it will take: 10 minutes

What you'll need:

4 large slices of bakery-style bread (such as country or peasant bread)

1 tbsp. unsalted butter, room temperature

1/2 tsp. sriracha

3 slices deli-style mozzarella cheese, torn in half

3 slices deli-style cheddar cheese, torn in half

3 strips bacon, cooked

4-5 medium-sized slices red onion

pickled banana peppers

roma tomato, sliced and seeds removed

salt & pepper kettle chips (or your favorite potato chips)

What to do:

In a small dish, combine butter and sriracha and stir until well mixed. Spread the sriracha butter on one side of each of the four slices of bread. Place 2 slices of bread butter side down.

Beginning with cheeses, layer the remaining ingredients on top of the bread.
Place the remaining slices of bread (butter side up) on top of the finished sandwiches.

Place a grill pan or fry pan over medium heat for several minutes until hot. Carefully transfer the sandwiches to the pan and cook for 4-5 minutes per side. Watch closely to ensure that sandwiches do not burn!

2. Apple and Bacon Grilled Cheese

How long it will take: 25 minutes

What you'll need:

4 slices bacon

1 granny smith apple

5 oz cheddar cheese

4 slices thick-cut bread

What to do:

Place the bacon in a frying pan (not preheated), then turn the heat to medium-high. Cook the bacon, turning frequently, for 8 minutes or until slightly crispy. Transfer the bacon to a clean plate lined with paper towel to let the excess oil drip off. Alternatively, cook the bacon in the microwave. Place the slices on a paper towel-lined microwave-safe plate and cover with a couple paper towels. Cook for 5 minutes on high or until slightly crispy.

Preheat a cast-iron pan over medium or a sandwich press. Slice the apple into thin slices (you'll only need about half), and do the same with the cheddar cheese. Butter one side of each piece of bread, and begin making two sandwiches. Layer each sandwich (butter side out) with cheese, apples, bacon, and a final layer of cheese. Cook for 3 minutes on each side using either method of cooking.

3. Jalapeño Popper Grilled Cheese

How long it will take: 8 minutes

What you'll need:

8 slice bread (preferably a round crusty Italian loaf)

4 tbsp. goat cheese

4 tbsp. apricot preserves

4 tbsp. jalapeño or hot pepper jelly

8 oz. sliced Monterey Jack cheese

8 slice crisp bacon

4 tbsp. unsalted butter

What to do:

On each of 4 slices of bread, spread 1 tablespoon of the goat cheese. Spread preserves over goat cheese, dividing evenly. Add 2 oz. Jack cheese to each, then 2 slices bacon. Top each with another slice of bread. Spread 1 1/2 teaspoon of the butter on 1 side of each sandwich. Press with a spatula.

Heat a large nonstick skillet over medium-low heat. Place 2 sandwiches, butter side down, in skillet. Cook 3 to 4 minutes, until golden brown. While first side is cooking, spread 1 1/2 tsp. of the butter on other side of each sandwich. Turn sandwiches and cook 3 to 4 minutes, until second side is crispy and golden brown and cheese has melted. Repeat with remaining 2 sandwiches. Serve hot.

4. Fried Chicken and Waffle Grilled Cheese

How long it will take: 15 minutes

What you'll need:

1 tbsp. softened butter

1 large waffle or 2 regular small square waffles

2 slices of Cheddar cheese

1 piece of fried chicken, cut into thin/small slices

What to do:

Depending on the type of waffle you are using, either cut it in half or split it apart.

On each waffle half, add a slice of cheese. Arrange the fried chicken pieces on one half, then close the sandwich with the other half of the waffle. Gently press the sandwich together.

Heat 1 tablespoon butter in a frying pan over medium low heat. Place the sandwich in pan and press down slightly with a spatula. Cook until the cheese on the bottom half starts to melt. Flip the sandwich over and cook until bottom is toasted and cheese has melted.

Remove the grilled sandwich from the pan and place on plate or cutting board.

5. The Greatest Challah Grilled Cheese Sandwich

How long it will take: 10 minutes

What you'll need:

12 slice challah or brioche

6 tbsp. butter

12 oz. shredded cheese

optional additional toppings:

grilled onions and bacon

grainy mustard and sliced tomato

smoked ham and roasted peppers

What to do:

Butter one side of each slice of bread.

Heat a flat griddle or large frying pan over medium heat. Mound about 1/2 cup cheese on each of 6 slices of bread (unbuttered side). Add any optional toppings (if using). Place remaining bread on top, buttered side up. Place 1 or 2 sandwiches on griddle or skillet (don't let griddle get too hot or bread will brown before cheese is melted). When bread is golden brown underneath, turn sandwiches over and press flat with a spatula. Reduce heat to medium-low and continue cooking until cheese is melted and bread is golden brown on both sides. Repeat with remaining bread and cheese. Slice and serve hot.
