(Source: The Blonde Vegan) Meet The Blonde Vegan, a.k.a. Jordan Younger, a NYC-based yoga and fitness enthusiast. Younger went vegan in 2013, after a five-day fruit and vegetable cleanse not only improved her energy and mood, but essentially fixed the debilitating stomach issues and migraines she had been struggling with since she was a baby. What do you love most about your lifestyle?
"My favorite thing about veganism is how light, energetic and blissful it makes me feel. I feel incredible about the choices I am making, and most importantly, I feel my best when I eat a whole-foods, plant-based diet. When you feel your best, you can give the most back to the world––to friends, family, work, sports, passions. I eat well so that I can feel my absolute best, and kick butt in this awesome world we live in."
What's the biggest misconception about being vegan?
"A) That we don't get enough protein. B) That we are totally out there, Birkenstock-wearing, lettuce-worshipping, head-in-the-clouds hippies. C) That our diets are boring and restrictive. D) That we feel like we are missing out on foods such as cheese and meat."
A lot of your recipes have fun names. What's the story there?
"Drinking a smoothie with the name of one of your favorite songs makes it at least a little bit more fun…right? In that case, why don’t we take the initiative to name all of our food after something that makes us smile? How about a 'Banana Pancake' smoothie after one of my favorite Jack Johnson songs, or a nice refreshing 'Daylight' juice by Maroon 5? I know it sounds funny, but I am always looking for ways to enhance people’s relationships to their food."
That certainly encourages a positive relationship with food!
"Nothing makes me more sad than seeing a perfectly beautiful human being get down on themselves because they don’t like the way they look or they think they need to lose a few pounds. We all think we need to lose a few pounds, so yes, I’m talking to you! The image-driven world we live in does not allow for a normal, healthy, symbiotic relationship between people and food. There is so much stress that surrounds eating. Guess what? Cut out the crap so you can love what you eat, eat what you love, and love the way it makes you feel."
Try Younger's breakfast smoothie recipe, Strawberry Fields:
½ cup strawberries
1 very ripe banana
½ cup kale
½ cup coconut water
½ cup water
3 to 4 big pieces of ice
Blend all ingredients thoroughly and enjoy.
