Recipe To Try: Make Your Own Healthy Vegan Ice Cream

Recipe To Try: Make Your Own Healthy Vegan Ice Cream!(Source: Julie West/The Simple Veganista)Even tried-and-true vegetarians and vegans still crave a delicious bowl of ice cream on occasion––especially during warm summer weather. While non-dairy frozen desserts abound, many are packed with sugar, soy and other ingredients many vegans (and almost vegans) prefer to avoid. And true to the celeb-approved, farm-fresh food trend, isn't dessert better when you make it yourself? That's why we adore this DIY vegan "ice cream" recipe from The Simple Veganista, aka Julie West, a Southern California mother of two who finds tremendous joy in her plant-based diet, and shares all kinds of scrumptious vegan recipes on her blog.

Even better is the news that West has created a fabulous technique to make your own vegan frozen dessert at home. It's natural, fresh, cold, sweet, refreshing and very healthy. Made with a base of bananas and coconut milk, you can prepare it in your choice of two consistencies. One resembles hard ice cream, and the other, soft-serve. In the spirit of summer, she's concocted this brand-new flavor exclusively for StyleBistro readers to sweeten your weekend. It's super easy to make, so try it, and enjoy!

The Simple Veganista's Banana Coconut Ginger Ice Cream

3 frozen bananas
2 to 3 tablespoons coconut butter, chilled coconut milk, or three tablespoons of shredded and blended coconut
2 tablespoons pure maple syrup
1 tablespoon ginger, minced
A  splash or two of unsweetened vanilla almond milk

Place ingredients into your food processor or blender, and process until fairly smooth and creamy.

For soft serve, eat right away.

For ice cream, place mixture into a freezer-safe container, cover and place in the freezer for at least four hours before serving. Scoop out like ice cream and serve.

Serve with mini chocolate chips, shredded coconut or whatever toppings you like. Makes two to three servings.
